Winemaker Philippe Melka's Tasting Notes
"In this textbook growing season, we harvested the grapes in perfect condition about a week earlier than normal. This 2007 wine was made with 100% Cabernet Sauvignon grapers from Napa Valley; it reveals delicate aromas of black currant, spices, black pepper and licorice on the nose. The mouthfeel brings a sense of finesse and depth. The velvety texture is combines with complex flavors of graphite, sweet cherry and rosemary finished with refined tannins. We feel confident that this vintage will be remembered as one of the best."
92 Points - Wine & Spirits
"Focused on dark, earthy flavors, this wine is classical in shape—it has a beginning, a middle and its flavors are targeted toward the end. Those flavors are mineral and firm for now, needing age to bring detail to the black fruit. Cellar this five or six years, then serve with roast lamb."
