
Winemaker Philippe Melka's Tasting Notes
In this text book growing season, we harvested the grapes in perfect conditions about a week earlier than normal, early October. This 2007 wine was made with 100% cabernet sauvignon grapes from Napa Valley; it reveals delicate aromas of black currant, spices as black pepper and licorice on the nose and the mouth-feel brings a sense of finesse and depth. The velvety texture is combined with complex flavors of graphite, sweet cherry and rosemary finishing with refined tannins. We feel confident to think that this vintage will be remembered as one of the best.

"Focused on dark, earthy flavors, this wine is classical in shape—it has a beginning, a middle and its flavors are targeted toward the end. Those flavors are mineral and firm for now, needing age to bring detail to the black fruit. Cellar this five or six years, then serve with roast lamb."
